Here is my Meatloaf recipe. It is my Mums:( From Elizabeth!)
2 lbs lean ground beef
2 organic eggs
1 1/2 cups bread crumbs
3/4 cup ketchup
A little Dijon, and a dash of worcester sauce.
Half an onion, chopped finely, or a pack of onion soup mix.
1/4 cup water or red wine.
Salt and pepper
Put it all into a bowl and mix on low.
Put into a loaf pan.
Spread 8 ounces of tomato sauce on top.
Bake uncovered for I hour at 350.
When I had to use smaller foil baking trays, I divided the mixture between two. Given the smaller portion per tray (about half) I estimated 35-45 mins at 350 would do the trick. Don't forget to thaw the loaf completely before cooking.
